I am one of those people who jumps on a bandwagon every new year. This year, I’m riding along with the people who want to get as far away from extra pounds as possible.

And (Lord have mercy on me), I also hope to drop a few bad habits, organize my closets, send birthday cards, and shop less often. We’ll see.

The loosing weight and keeping it off resolution, I’m taking the most seriously. Here are some foods along with some tips that I intend to use this year:

  • Before eating or drinking in the morning, finish a tall glass of ice water.

  • Substitute soft drinks for ½ soda water and ½ pomegranate juice.

  • If  you are not exercising, wake up ½ hour earlier and take a 15-minute walk each day. You’ll be surprised by the difference this makes!

  • If you are already exercising, increase the intensity or length of your workout – or add an extra day of working out. You will lose weight!

  • Buy fresh produce and chop and shred it, storing it in zip-locks or plastic containers. Now you can have a salad any time you’re hungry!

  • Teach your children to eat healthily. It will force you to do the same.

  • Pick one evening a week to fast from dinner. Just before bed, eat a piece of fruit and drink some hot tea.

  • Don’t eat after 6:00 p.m.

Cobb Salad Vitale

Serves 2

Substituting cheese and nuts for meats allows your body to spend less time digesting and more time repairing.

 ½ head Romaine lettuce
3 cups fresh spinach leaves
½ cup walnuts
¼ cup flax seeds
2 Tablespoons sunflower seeds
½ cup crumbled Gorgonzola or blue cheese
½ cup grated Parmesan cheese
1 large, ripe, chopped tomato
2 thinly sliced celery stalks
½ cup shredded carrots
½ bunch minced green onions

Wash and cut lettuce and spinach into bite-sized pieces. Place in a serving bowl. Mix the nuts and seeds together and pour them over the lettuce in a column. Mix the cheeses together and sprinkle them in a column opposite the seeds. Then lay the tomatoes, celery, carrots, and green onions in consecutive columns over the lettuce until the entire salad is covered.

Now you have a colorful presentation for a friend and you to share. For dressing, mix olive oil in one part with dark Balsamic vinegar in two parts. Pour over salad. Serve immediately with a slice of deli-fresh sour dough bread.

 

 

Tasty Yogurt Smoothies

Serves 2

Bad eating causes toxins to accumulate in your body. They create disease and health problems. The prevalent toxin among Americans is refined sugar. Instead of dessert tonight, try one of these refreshing shakes. My husband and my daughter love these.

2 ripe bananas
8 - 10 frozen strawberries
2 cups plain non-fat yogurt
2 cups crushed ice
4 Tablespoons local honey
splash of orange or pineapple juice concentrate

Blend all ingredients except honey in a blender until smooth and of the consistency you desire. Drizzle the honey in a tablespoon at a time with the blender on, until fully incorporated.

You can experiment, substituting flavored yogurts and other types of frozen fruits. This is our favorite. It really can substitute for an entire meal. Just increase the portions and add ¼ cup wheat germ.

Halcyon

Serves 1 or 2

Give yourself an internal bubble bath by munching on fresh fruit and warm ginger tea for lunch one day this week. Strawberries and grapes provide the roughage and acid necessary to aid in ridding toxins. Kiwi fruit is a natural laxative. One-quarter of a lemon contains the same amount of Vitamin C as an entire orange.

1 apple
3 kiwis
1 pear
½ pint strawberries
½ pint raspberries
¼ small melon
a lemon quarter

Cut the fruits into bite-sized pieces. Arrange them on a plate. Squeeze the lemon quarter over all.

Brew your favorite hot tea. Go to a quiet corner and read or meditate while you slowly eat the fruit, enjoying the freshness of each bite. I recommend Psalms 18, 23, and 32.

 

Ginger Root Tea

Earthy-sweet with a bite

Peel and chop one tablespoon of ginger root. Pour three cups of boiling water over it and let it steep for about 5 minutes. Sip from your favorite mug or cup. Add honey or artificial sweetener, if you like.
